Lemon Mint Tabbouleh Salad

Serves 6

3 large garlic cloves, minced

1 cup bulgur

1 cup boiling water

1 cup chopped seeded tomatoes

cup fresh flat-leaf parsley

2 large scallions, chopped

2 tablespoons chopped fresh mint

cup Wild Thymes Meyer Lemon Salad Refresher

Salt & pepper to taste

Place bulgur in large bowl. Mix in boiling water. Let stand until bulgur is tender and water is absorbed (15-20 minutes). Mix in tomatoes, parsley, scallions and mint. Add Salad Refresher and mix well. Season with salt & pepper to taste.
