Roasted Apple Shallot Wild Rice
Serves 6-8

1 cups wild rice

3 cups water

cup chopped pecans

cup chopped fresh parsley

cup dried cranberries

cup diced yellow or red tomatoes

6 scallions, finely chopped

cup Wild Thymes Roasted Apple Shallot Vinaigrette

Salt to taste

Bring salted water to a boil. Add Wild Rice, reduce heat to simmer and cook until tender but still firm (approximately 30 minutes). Drain the rice and add all other ingredients. Great for vegetarians.
