Caesar Potato Salad
2 lbs. red-skinned baby potatoes
¼ cup mayonnaise
6 tablespoons freshly grated Parmesan cheese
Place potatoes in large pot. Add enough water to cover. Bring to boil and cook until potatoes are just tender (about 15 minutes). Drain and cool. Combine vinaigrette, mayonnaise and cheese until well mixed. Add to potatoes and mix gently until combined. Great for vegetarians.
