Spicy Fish Cakes
Serves 6-8
2/3 cup scallions, chopped
½ cup panko (Japanese bread crumbs)
2 tablespoons fresh basil
4 tablespoons Wild Thymes Moroccan Spicy Pepper Dipping Sauce
2 teaspoons fresh ginger
4 cloves garlic, chopped
2 large egg whites
2½ lbs of cod (or 1¼ lbs cod and 1¼ lbs scallops)
1 tablespoon vegetable oil
Preheat oven to 350 F. Place first 8 ingredients in a food processor and pulse until coarsely ground. Divide fish mixture into 6-8 equal patties. Heat oil in a nonstick skillet over medium-high heat. Add patties. Cook 2 minutes on each side. Wrap handle of skillet with aluminum foil and place in oven. Bake for 5 minutes or until fish flakes when tested with a fork. Great for vegetarians. Serve over salad greens or on a roll as a sandwich with Wild Thymes Moroccan Mayonnaise.
