Arugula and Smoked Mozzarella Salad with Lemon Vinaigrette

Serves 6

1 12-oz head radicchio, halved, cored, very thinly sliced

3 cups arugula

cup thinly sliced sun-dried tomatoes

6 tablespoons pine nuts, toasted

9 oz smoked mozzarella, cut into 1/8-to -inch-thick slices

cup Wild Thymes Fresh Meyer Lemon Salad Refresher

Mix radicchio, arugula and tomatoes in large bowl. Add Salad Refresher and toss well. Divide among 6 salad plates, sprinkle with pine nuts and serve with mozzarella. Great for vegetarians.
