Shrimp Salad
 

Serves 6

cup golden raisins

1 lb cooked chicken, cubed

cup sliced almonds

1 apple, diced

cup minced celery

1 tablespoon minced flat-leaf parsley

cup scallion or red onion, chopped

Salt & pepper to taste

2 tablespoons mayonnaise

1/3 cup any Wild Thymes Salad Refresher or Wild Thymes Vinaigrette

Combine first 7 ingredients. Whisk together mayonnaise and Salad Refresher and dress chicken salad. Serve over a bed of greens, on a sandwich, with Wild Thymes All-Season Rice Pilaf or Four Season Salad.
