Fruit Marinated Salmon
1 2½ -pound salmon fillet
2 tablespoons olive oil
Salt & pepper to taste
Preheat oven to 450 F (or can be cooked on a gill). Line rimmed baking sheet with foil and brush with olive oil. Place fish, skin side down, on baking sheet. Sprinkle with salt & pepper. Bake until fish is opaque in center, about 20 minutes. With a spatula, gently slide fish off of baking sheet onto platter and drizzle with Salad Refresher. Serve with Wild Thymes Caribbean Peach Lime Orzo Salad, Lemon Mint Tabbouleh Salad or All-Season Rice Pilaf or any other Wild Thymes salad.
