Middle Eastern Chicken in Pomegranate Sauce

Serves 6

1 cup Wild Thymes Pomegranate Salad Refresher

1 cups chopped walnuts

1 cups chicken broth

1 teaspoon ground cinnamon

teaspoon salt

teaspoon freshly ground pepper

1 tablespoon honey

6 boneless skinless chicken breasts

1/3 cup all-purpose flour

2 tablespoons olive oil

2 tablespoons fresh flat-leaf parsley, chopped

In a food processor, combine Salad Refresher, walnuts, broth, cinnamon, salt, pepper & honey. Set aside. Roll chicken in flour to coat. In a nonstick skillet or Dutch oven,heat up oil and brown the chicken pieces. Drain oil out of pan and add chicken and pour pomegranate mixture over chicken. Bring mixture to a boil and then reduce heat. Simmer covered about 20 minutes and then uncover and simmer an additional 15-20 minutes (sauce will reduce). Serve chicken over couscous with sauce spooned over it and garnish it with parsley. Serve over Wild Thymes All-Season Rice Pilaf and any Wild Thymes salad.
