Cranberry Fig Sautéed Chicken Breasts

Serves 4

3 tablespoons butter

4 boneless, skinless chicken breasts

1/2 cup chopped onion or scallion

1/2 cup balsamic vinegar

1 clove garlic, chopped

1/4 cup heavy cream (yogurt or non-fat sour cream or yogurt can be substituted)

1/4 cup Wild Thymes Cranberry Fig Sauce*

2 tablespoons cooking sherry (optional)

Salt & pepper to taste

Sauté chopped onion and garlic in butter in skillet until very lightly browned. Add chicken breasts and cook on medium heat for about 5-7 minutes, turning over to brown evenly. Reduce heat, mix cream, Cranberry Sauce, sherry and balsamic vinegar together and add to skillet. Cook 5 minutes more or until sauce reduces and thickens and chicken is done. Salt and pepper to taste. * Substitute any Wild Thymes Cranberry Sauce. Serve with Wild Thymes Endive Radicchio Salad with Pears Figs & Cabrales or Arugula Tangerine & Blue Cheese Salad and Roasted Apple Shallot Wild Rice, Apricot Cranberry Walnut Orzo Salad or Moroccan Roasted Potatoes.
